Ken’s Cafe Tokyo makes a supreme gateau that uses the only grands crus chocolate in the world mixed by Domori founder Gianluca Franzoni.
The Gateau au Chocolat Set includes two types of gateau (one at room temperature, one warm), so guests can compare the tastes. The rich texture of the room temperature gateau and the just-sweet-enough whipped cream with the lightly heated gateau are complemented by homemade white miso ice cream, presenting a perfect harmony of tastes available exclusively at INTERSECT.The set also comes with hojicha chai (green tea chai), beverages carefully selected to match the gateau.
The Chocolatini is an original cocktail developed by Ken’s Cafe Tokyo, expressing the complex flavor of a special couverture in an exciting and new way.

In his early career he gained experience at such high-end venues as Hotel Okura Tokyo, Akasaka Ark Hills Club, and Restaurant Maestro, where he developed techniques in cooking, confectionery and baking. In 1998, he opened Ken’s Cafe Tokyo near Shinjuku Gyoen. He makes frequent appearances on television and in magazines to offer his expertise on cooking, as well as giving talks on business all over the country.
